As I understand it, a single class is a single activity. So, if that is the case then if English Grammar meets five times per week I need to make five distinct activities, is that correct?

The same for English reading and English listening, math and other classes, is this right?

Yes, you need to add an activity split into 5 (sub)activities for English Grammar.

So to be clear, I need to make an activity called " AS English Grammar - 1", "AS English Grammar - 2" "AS English Grammar - 3" . . . "AS English grammar 5"

"AS Math 1" . . . "AS Math 7"
"AS ECON 1" . . . "AS Econ 7"

and so on for each topic

So, in the DATA > Subjects screen, for each subject, that meets seven times a week, it would be listed seven times?

No; the subject is listed only once, and the activity will be "AS English Grammar" with 5 components (split = 5).

It is not good to split into 7 if the week has 5 days. Split into 5, and two subactivities will have duration 2.
