Is it possible to amend only one article in the schedule without prejudice to the other articles?

What did you mean by "modify"? Change day/time only? Or change subject/teacher/student of an (sub)-activity?

You should load the generated FET file from the results folder.
Each activity got a preffered time constraint in that file.
Just modify that constraint and generate again. (That will take just a second and give you the same result)

When adding a professor in a subject and redistributing the cohorts to the professors, is it possible to keep the schedule fixed and change the schedules of the professors of that subject only without affecting the other subjects?

That is depending on your dataset. If it is easy, then it is possible. But with difficult timetables you will get conflicts by that.

If you want to do it, then you need to do it similar as i wrote above:
You should load the generated FET file from the results folder.
Just modify that activities and generate again. (That will take just a second and give you the same result)
If you got conflicts, you need to modify your constraints. Or unlock (some) activities.
