I am interested in trying to use FET for my church's volunteer management. But another person (who's more likely to be confused) will be maintaining the actual scheduling of tasks. How easy is it to change the labels for things like Class, Teacher, Student, etc.?

They need to be things more like "Task" or "Role", "Leader", and "Volunteer", so that she will be less likely to be confused by the terminology she sees being used in the program.

Is this a simple change of strings in a couple of places? Or is it deeply rooted in some way that would make it difficult to change?

It is deeply rooted, indeed.

I know a person who needed it for other purpose, like you. He uses FET in Arabic. So, he got the Arabic translation file and translated it again (only modified parts).

You could use this approach. Translate in file fet_untranslated.ts only the important strings and save it as a foreign language (like overwrite fet_ro.ts and fet_ro.qm). You can search for words "Students set" and so on in the translation file.

You only need to translate the fields you want to modify. If you leave a field untranslated, it will be in original English.
